Summer Slow Cooker Recipes

Let your summer nights be a little lazy by starting dinner in the morning. Have a barbecue in your slow cooker with these easy recipes.

Slow Cooker BBQ Ribs

What Do I Need?
3 lbs. boneless pork ribs
1 tbsp. olive oil
1 medium onion, cliced

For the Sauce:
1/3 cup soy sauce (use low-sodium)
1/2 cup ketchup
1 tbsp. mustard
3 tbsp. brown sugar
2 or 3 garclic cloves, chopped
2 tbsp. apple cider vinegar

How Do I Make It?
1.  Trim any excess fat from ribs and brown them in olive oil in a large skillet.
2.  Place the browned ribs in your slow cooker and cover with onion slices.
3.  In a small bowl, whisk together all of the sauce ingredients.  Pour over ribs and onion.
4.  Cover and cook until done, on low for 8-10 hours or high for 4-6 hours.

Slow Cooker BBQ Hot Wings

What Do I Need?
24 chicken wings
3 tbsp. vinegar
1/4 cup Red Hot sauce (red pepper sauce)
1 pkg dry Hidden Valley Ranch dressing mix
1/2 cup melted butter
non-stick cooking spray

How Do I Make It?
1.  Spray the slow cooker bowl with non-stick spray. Add the chicken wings in layers, sprinkling with dry Hidden Valley Ranch Dressing mix as you go.
2.  In a small bowl, whisk together the vinegar, Red Hot Sauce, and melted butter. Pour evenly over wings.
3.  Cook on low-medium for 4-6 hours until done.

Slow Cooker BBQ Beef Sandwiches

What Do I Need?
3 lb. beef chuck roast, boneless
1 cup barbecue sauce
1/2 cup apricot preserves
1 tbsp. Dijon mustard
3 tbsp. brown sugar
1 small onion, finely diced
1 small green pepper, finely diced
non-stick spray
whole wheat hamburger rolls

How Do I Make It?
1.  Spray slow cooker with non-stick spray.  Trim any excess fat from beef, cut beef into four pieces, and place in slow cooker bowl.  
2.  In a small bowl, mix together barbecue sauce, apricot preserves, mustard, brown sugar, onion, and green pepper.  Pour over beef.
3.  Cover and cook on low 6-8 hours until beef is tender.
4.  Remove beef pieces from slow cooker and place on cutting board.  Slice in thin slices.  Put beef slices back into the slow cooker with the sauce and let cook for 30 minutes more. Serve on whole wheat rolls.
